β Cyclodextrin Nanocomplexes with Biologically Active Peptides from Hydrolysed Bovine Whey and Colostrum

β Cyclodextrin nanocomplexes with extensive whey and colostrum hydrolysates possessing acceptable flavor properties serve as potential sources of bioactive peptides. In this study, comparative characterization dairy protein their complexes cyclodextrin is presented. Antioxidant activity studied samples was estimated by fluorometric method, the formation clathrates cyclic oligosaccharide determined using thermogravimetric analysis. A significant decrease in bitterness peptides included oligosaccharides established compared hydrolysates. 2.1/1.3 fold increase antioxidant whey/colostrum recorded versus unbound peptide fractions. According to toxicological tests on Tetrahymena pyriformis, hydrolysate resulting nanocomplex were referred non-toxic slightly hazardous compounds, respectively. The dynamics body weight gain relative coefficient internal organs revealed no differences control group Rattus norvegicus. data differentiation blood cells, death, cytogenetic disorders demonstrated that a sample at maximum dosages allowable for administration. complexing resulted enhanced radical-reducing improved properties, making promising safe ingredients special nutrition formulas.
